Summary: Read the instruction book first, then use a spatula
Comment: I am amazed at the number of negative, or misguided reviews for the Cuisinart CBK-200. If your machine is a lemon, my apologies, but the truth of the matter is that a large number of the negative reviews here show that they simply failed to read the instructions. You CAN stop the machine in mid-cycle (hold the off button for three seconds); you CAN mute the add mix-ins beeps (simply press the button off); and you CAN turn out wonderful breads, with the right textures, crusts and sizes. It's all at your fingertips. Whether you are an experienced baker, or someone who bakes every now and then and has used other breadmakers, or -- even -- someone who is new to bread machines, my suggestion is that you start with a boxed mix. King Arthur, for instance, sells a large variety of bread machine mixes which are fool-proof and should, within the first three hours, give you a verdict as to whether your machine is in good working order, or needs to be returned. The margin for error with a mix is almost non-existent, so long as you add the few ingredients and make sure the water temperature is as required. This may sound basic, but I wonder if users who complain actually took the time to program the loaf based on size, crust and type of bread. Keep in mind that bread machines are tools for your bread baking and regardless of maker, you need to keep an eye on the dough, especially during the first knead ... that's where the spatula comes in handy as you work with the machine in making sure all the flour, liquids and other ingredients are incorporated. I have baked a number of breads with this machine, many from scratch, and have yet to have any problems. There are certain features which make this product extraordinary: The kneading paddle reverses motion every few minutes; the beep to remove the paddle is very convenient; the convection fan yields a wonderful crust; the artisan bread program is innovative. The machine itself, including the interior, is well-made, solid and (I'm biased) beautiful. At about $100 how can one expect more? It does what it's supposed to do and does it flawlessly ... unless us humans thwart it by not following instructions or giving a little help now and then with a cheap, 50-cent, spatula. If you happen to get a bad machine, Cuisinart gives you THREE-YEARS to return it. Do your research and buy the right machine for you. For me, this is the one I would buy over, and over, and over again.

Summary: Great Bread Machine
Comment: I bought one of these for myself to replace and older Hatachi machine. It is a great work horse of a machine. I have noted that the recipe book for the machine tended to make too moist a dough, the loaf was rising too high and then collapsing, but that was not the fault of the machine. If you keep your eye on the kneading and add more flour as needed it turns out fine.

Comment: Short and to the point. For the money this is the best bread maker around. easy to use, with great bread in the end. I have two boys diagnosed with a Gluten allergy. So I have to make all my own bread. this bread maker has been putting out two loafs of bread a day for over three months. I had two other bread makers before this one. And to say the least I burned them out in one month.

Summary: Machine is as good as the bread it bakes
Comment: I am very satisfied with this appliance. I was shocked that I wasn't able to find any bread machines in "brick and mortar" stores. And I am glad of it. Since I was shopping online, I took the opportunity to actually research what I was buying. I saw some negative reviews on the CBK-200, but they looked like they came mostly from novice bread makers.

I am really pleased with the stainless finish and I like the horizontal loaf. Even with only 1 paddle, it seems to get the dough thoroughly kneaded.

The controls are easy to use, but you will need the book for a while because there are so many options, The manual is a little difficult to use. I wish they had a better explanation of each of the cycles. I ruined a batch of dough before I realized that the "artisan dough" was a no bake cycle. Also the "bake only" cycle is only 10 minutes.Seems like they should have a 30 min bake only cycle too.

Still I have owned two other bread makers and used several others. This one is the best yet.

Summary: From a Granddaughter of a Baker
Comment: The shape of this machine makes it easy to keep on the counter out of the way, and you don't have to put it away. That makes for more breadmaking. The shape of the loaf is good - not square and slightly rectangular. Eash to clean, instructions and buttons on the machine are easy to use. Book has useful suggestions to get the most out of the breadmaker. I can no longer knead bread, and haven't yet made anything on just the dough cycle, the but whole wheat and rye and even white bread was fantastic. The delay feature is great - wake up to fresh bread! This is my third breadmaker, and I like this the best. I used the heck out of the others!
