Summary: Watch out!
Comment: Amazon considers all sizes of this knife - from 4.5" to 10" - a single item for reviews. As a result, half the reviews will not apply to the size you are looking at. The reviewers naturally assume their review will only apply to the size they are looking at, which may may well be different from what you're looking at now.

I have owned three sizes of this chef's knife, one with the 8" blade, one with the 5" blade, and one with a 5.6" (14 cm) blade. If you are looking for your first chef's knife, you probably want the 8" size or larger. I've found that the 8" size works well for almost any cutting task in my kitchen; there are times when it feels like a bigger knife might work even better, but the 8" still works. I never specifically want a smaller chef's knife; I might not need the full 8" blade for mincing scallions, but it still works fine.

Sometimes, though, it's convenient to have more than one knife - for example when one has just trimmed a raw roast, when it wouldn't be hygienic to use the same knife to cut fresh vegetables for a salad. One can resort to a utility knife for those situations, but a chef's knife is faster.

That's why I got my second chef's knife. I originally got the 5" size, because I was sure it would fit in an available smaller slot in my knife block. It fit, but unfortunately there are few chef's knife tasks that are small enough for the 5" (12 cm) size. That's when I actually measured my knife block, and traded in the 5" knife for my current 5.6" (14 cm) knife. The extra 2 cm doesn't sound like much, but it actually makes the knife much more capable for the smaller chef's knife tasks, such as slicing those onions or bell peppers for the salad.

When I'm only going to need one knife, I still use the 8" knife. When I know I'm going to need two knives, though, I can usually divide the cutting tasks so that the smaller chef's knife can be used for one set of tasks, reserving the 8" knife for the tasks that require the larger knife.

A few words on model and quality. Wusthof makes the best knife blades in the business, and in my opinion the best quality knives. This "Classic" style, with the three rivets attaching the black composite handle pieces to the full length tang of the blade, used to be the only style of handle they made. They now make several other styles, including the slightly less expensive "Grand Prix" line with a molded handle, and the much more expensive "Culinar" line with stainless steel handles. If you have money to burn, you might want to look at the Culinar line, but for most people, the Wusthof Classic knives are likely the best tradeoff between money and quality. They will certainly last a lifetime of enjoyable use.

Summary: The Sweetest Litte Chef's Knife Ever
Comment: I've been a fan of Wüsthof knives since I worked my way up to sous chef while paying my way through school. All the cooks had different knife sets (one of my favorites was a LamsonSharp set, forged locally in Massachusetts) and I got to try many styles of the French and German blade shapes. I couldn't afford good knives at the time, but after lots of testing, I found the German shape (strong curve towards the tip) the most pleasant to use; I prefer rocking slices to pulled slices (i.e., French style). Wüsthof epitomizes the German shape.

This little knife is the perfection of the traditional German shape. Incidentally, I've found that I use this size of knife more on a daily basis than I use my 10" chef's knife or my paring knife combined. It is the perfect size for the many small cutting and slicing tasks I perform on a regular basis. It is extremely well-balanced, well-forged, and aesthetically pleasing both tactilely and visually.

As a most unexpected and delightful addition to my knife set, filling a need I didn't realize I had, this knife is highly recommended.

Summary: Great knife, but dulls quickly.
Comment: This is a great knife (weight, balance, etc) but it seems to dull quickly despite the fact that it is rarely used on anything more than fruit and veggies. Don't buy it unless you are willing to invest in a sharpener to go with. The one on the back of our automatic can opener seems to work great. DO NOT use an automatic sharpener with this knife. Three to four strokes on a manual sharpener does a perfect job. An automatic will take too much metal off.
